Nah, there's no reason for it, really. Jaime just thinks it'll help hide his identity, but the Stark men catch up to them and the first thing Ryger asks is "what happened to your golden curls?"
So there'd be no point in making Nik shave his head. Except to piss off us. Which they really don't want to do.  __________________

Though, since Brienne isn't about to arm him with a dagger or strike off his chains, then she'd be forced to shave him (since it was Ser Cleos in the book) - - which might be a hi-larious scene.
