Re-watched part 1 and there were so many creatures that I've forgotten. A creature named Dougal and then of course all the other beasts inside the suitcase. But really the movie only focused on 4 creatures: Niffler, Thunderbird, Swooping Evil & Bowtruckle. The others were only 'side characters'. The Erumpent being also the memorable creature because of Newt's mating dance.
