I think it was just a callback to BlueBellians apparent love of singing and dancing.

I totally agree with this, Lavon/Zoe needed a scene in the finale and I'm super sad we didn't get one, but I did like the finale overall, although I do wish we got to hear what W/Z named their son

Could the lack of a Zoe Lavon scene be to show that Zoe has totally assimilated into the town, and she doesn't need Lavon as a link or lifeline anymore?

I don't know. There was so much going on in this episode that I actually didn't even think about Zoe and Lavon not talking that much. There were so many other relationships that needed closure and some that we rarely see. I'm not sure a ZL scene was even needed to be honest.

Yeah, not enough time to close everything up. The would have needed a 2 hour finale. The end was very rushed.

I didn't think much of the lack of LL. I think they've had some great moments this season.
