The show could've also explained it by cutting to a circle after Eric's rant, showing that he was in it the whole time, and Hyde declares Eric's "had enough".

I have been thinking about these two a lot lately though, I really think they could have worked things out and made it work.

I think they could have, too. The only reason their relationship ended is that Shannon Elizabeth left the show, and the writers weren't going to put Kelso in a long-distance relationship we never got to see on-screen.
