As for an animal's heart, that would only work with magic. I don't know how much biology training someone doing DNA testing has to have - maybe not enough to tell at a glance - but I do know gorillas, chimps, and orangutans - our closest relatives - all have 48 chromosomes compared to a human's 46. Any genetic scan that doesn't catch that shouldn't be in business.

If they were to use an animal's heart, I'd probably go with Ruby/Emma not being able to tell the difference and the heart never actually being tested by any outside lab (instead Gold or Regina faked the results).
