I guess it's because sharks can swim well. He transfigured himself into one but only managed to do his head but it still worked as he was able to rescue Hermione.

Cedric used a bubble head charm, the same spell Fleur used:

Ah maybe because the veil on the mouth looks like a bubble when it's in the water, kind of jellyfish like.

My guess is roughly 3-4 days. There were a lot of extras and most of the cast were there.
