Maybe because of the reason Ciri is saying she wants to become a mutant. She said she just wanted to help them earlier in the episode. But in that scene he is finding out there was more to it than that.

Vesemir had his hope to create new witchers cloud his judgement. i know Ciri wants it but Vesemir should've waited for Geralt to come back and talk about it.

Geralt handled it so well. he understands her reasons to want to mutate but telling her basically "this is the wrong way my child".
