i mean nothing is stopping them (ok maybe Vesemir and the other witcher brothers) from leaving their slaying job and just living a "normal" life even if they are witchers.

They spent there entire childhood training to be a witcher. They spent there whole life up until they day they dye being witchers. I don't think it's that easy to just walk way from that.
