I don't think it was clearly stated, but I think he saw how Jon treated people, and how Stanis showed Jon the respect (and vice-versa)

I think it would be... at first I got a feeling that Stannis wasn't charismatic, but he seemed at least fair and honorable.... things went wrong because he followed Melissandre blindly.

I thought he was way too naive.... he completely changed everything in his personality because of her.... he was a true fanatic (specially considering what he did to his daughter )
