Here's one of my many headcannons: Loki stabbed Thor to make Thor think that Loki really did hate him. If Thor believed that to be true, then he would give up on his brother. In Loki's mind, with the battle not going as planned, he was surely not going to be able to get the Tesseract out of Earth as planned but he would make his escape with the Chitauri. So be it if Thanos tortured and killed him. Thor would be safe and that was all that mattered because no matter what he said or did, Loki really did love him. He just hadn't planned on getting smashed by a Hulk!!
