Speaking as a person with a phobia, I know how you can freeze up even when the rational part of your brain knows the only logical thing is to go trotting up to the thing that terrifies. It could be a matter of life and death, and you'd be more afraid of whatever it is than the death option. It's not that you don't know where the real danger is. The reasoning part of your brain gets that. It's that the emotions pour all the fear onto whatever it is that terrifies you. You don't have any capacity to be afraid of the thing you should be afraid of. You're like a terrified horse that will run back into a burning barn.

So, I can understand Rumple's terror unexpectedly and completely kicking in and overwhelming him when he had to relive it. I can understand that he didn't see how strong his terror would be until it hit--portals are not something he would have had to experience often, so it's not like he would know how overwhelming his reaction would be.
