I don't think italian is that easy. (Unless you know a language like Portuguese or french which does make it pretty easy). The easiest ones are the ones that are similar/have the same roots that the languages you already know.
I've always wanted to learn swedish (no particular reason - I've just always loved the scandinavian countries and wanted to live there when I was little)
