Maybe he has fairy dust stashed in his back pocket and that helped him take the heart? I don't know if they ever intend on bringing Peter Pan or Tink on, but if they did exist he must have learned something from them (or Cora herself)? And if Hook intends to go up against Rumpel he should know all he can about magic.
I'm curious how Aurora didn't feel it since others who had their hearts taken did.
