I played Halo 2 about half an hour ago. But if you mean like actually beaten wise, I would say Ratchet and Clank 3: Up Your Arsenal.
I am still working on Metal Gear Solid 3: Snake Eater and Splinter Cell: Chaos Theory. I think both games are excellent in stealth. But I have to give Metal Gear Solid the edge because of the characters, plotline, etc. ^_^
