I like the idea of some opening post banners, as well. For the threads that are frequently visited, I think it would be a cute idea.
Maybe you could post a sign-up for the threads you wanted an opening post for, and then individual people could choose which thread they would like to design. That way, you'd have a lot of variety and many people could participate.
