so how will they refer to Catherine now that she's not Queen? Does she still have a title or is she still considered a Queen as in once a Queen always a queen?

Catherine IS still a queen. Once a queen, always a queen. She's currently the Queen Dowager, before she was the Queen Consort (as is Mary now), she will later on become the Queen Regent when Francis dies and she has to govern France in Charles' name.

She should still be addressed as "your majesty".
