Yes I think it's Remus eating that chocolate bar. Remember in PoA, he has chocolates with him in case a Demnentor attacks.

I'd have to read up about this but when he was studying at Hogwarts, has he encountered a Dementor before and that's why he knows how to handle them?

If they're going to cast the Marauders for a miniseries or a movie, they should refer to that drawing for how they should look like.

I wouldn't be mad if they make a Marauders miniseries or a TV show or even a movie. But probably not now but in the far future.
