I hope will we see more of Daphne in s2, maybe even caring for the baby?

All the books have an additional epilogue (JQ created it years later and put it all in one book). I've read it but don't remember much. I looked it up and Daphne and Simon ended up having 4 kids - Amelia, Belinda, and Caroline, and David.

But in the TV show, it's different from the books. Daphne had a boy first to fit in more with the storyline of Simon.
