Jon directed both of the first 2 movies didn’t know that and just noticed now by randomly looking up at beginning credits for Iron Man 2

Yes he did.

He directed The Jungle Book and The Lion King as well.

Hmmm, I can't find direct links as to why he didn't. His wiki page does list him as executive producer, same with Avengers 1. Could be that he was filming something else or busy writing something else?

He is and I love that he took on a character. Happy is quite an important character in Tony-verse and love it’s leaked over to Peter now

It's a mutual support system, it's so important especially when you're working on projects like these. Like people were so skeptical about RDJ and Jon's choice, they were so skeptical on if Iron Man would even work.

I'm honestly so grateful that the video of the first showing of Iron Man footage ever is still online, hearing the people get excited just gets to me.
