I read that new interview from Jen and I loved what she said about happy endings, preferring to call them 'happy beginnings' instead because when it comes to this show, we were shown the end of the story that lead up to the next chapter in the pilot (ie. Charming kissing Snow and then the curse).

So, her logic totally makes sense.
