I often wonder what kind of friendship these two had as they got older.

I'd hope as they both matured, their relationship would mature. We were deprived of seeing any real development in their friendship after S5 -- which is ridiculous, considering they shared a major story arc during season 6.

I would like to have seen them grow a more mature friendship after the show.

They were going to be in-laws, basically, with Eric marrying Donna, and Jackie marrying Hyde. So they would've been even more connected.

We never got to see E/D and J/H on a double date. That's pretty weird, don'tcha think?

That could've made for a fun episode and it's odd that the show never went there, considering how close the group was anyway.
