I think about that sometimes. He would be greatly missed by the town, that's for sure. I think Lorelai would feel guilty and think the town hates her and that it's her fault Luke moved away. It would be easier for Luke to heal and it allows him to bond more with April, which is a good thing. Perhaps he would come to realise eventually he loved his town and would want to move back. Then the time apart of LL literally not seeing each other at all, gives them both a wake up call of how much they love each other and it starts them on a path of reuniting. Even if in this scenario Lorelai still gets with Christopher, she's always going to realise it was never supposed to be him, but always supposed to be Luke.
