The Knights are the students that rebelled against Luke with Kylo and as far as I know that's all that's been said about them so far, I think they'll only release books about them after this trilogy is over but I could be wrong of course

Here is a theory about who the big bad of the trilogy actually is. Snoke is dead and I definitely don't think, that it's Kylo, after TLJ. So the obvious choice would be Hux since there is really no one else. The author made some really good points about it

And we've always seen Hux's ambition. He was so ready to kill Kylo the minute Kylo was down. However if they make him the big baddie, he's gonna have to grow some major balls because I don't think the audience takes him seriously enough at this point.

Hux isn’t taken seriously - he’s a background character - I don’t mind him but that’s a pretty big and ambious theory

thought Snoke but look at him and no way Kylo is gonna be - so like said leaves Hux but also not sure at all what to think

Maybe the Knights of Ren will come in play too. They joined Kylo, but that doesn't mean they will follow him forever. It was even implied by Rian Johnson, that if he used them in TLJ, he would have used them instead of the guards in the throne room, so they would end up on the opposite sides.
