I think that balance means both sides stand a chance. Like one side isn't overpowering or dominating the other.

I agree. Personally I always thought that the "bring balance to the force" thing meant darkside and lightside were even in strength and power.

I think that might be the same thing as dark vs. light.

I don't know what else it could be, but that doesn't mean that there can't be anything else.

I wonder why the Jedi didn't contemplate this "bring balance to the force" issue a bit more.

I think they were just as confused about it as we are

Not from what I have read so far. They disagree on what kind of Jedi they should be to help the galaxy maintain peace.

Sometimes I lean more toward Sidious, because he rose to power. But sometimes I also think it's Bane because he destroyed them all and built them new again to be stronger.

They don't tell you on purpose. So to make you go back and forth like this

I have a few theories:

Theory 1: Anakin wasn't chosen at all. In this theory, Luke was the chosen one. It's usually the "first explanation". Of course, by fathering Luke, Anakin still played a role in bringing balance to the Force.
Theory 2: Anakin did destroy the Sith. This one has a certain appeal, since Anakin killed Palpatine. Of course, in the EU, Anakin didn't destroy the Sith, and Lucas has a great deal of control over the EU (e.g., no more Wookiee Jedi, controlling when characters die).
Theory 3: The "balance" referred to balancing the Jedi. The Jedi weren't blinded by the dark side; they were blinded by their own arrogance. That's how Anakin can slaughter Sand People and still not be expelled from the Order. Obviously the fact that Yoda was willing to entrust the future of the Jedi to non-Jedi (such as the Lars and Organa families) demonstrates that Yoda had been humbled by his defeat at Sidious' hands.

The Sith'ari sounds like Sidious.
