I think TOS Spock and Uhura have a lovely chemistry together. He'd treat her like a lady....well he always did actually.

Can I talk about this quote?

This is one of my favorite quotes and it just gets me thinking; How many times has Spock been privy to an angry Uhura that he DOESN'T want to upset her? Spock has no problem pissing off the Vulcan High Council, his father, Pike, Kirk or Bones, but when it comes to Uhura, big NOPE!

Good point! As Trude said, he'd have some experience with human females through his mother, but interesting how Spock chooses to pick his battles.
