I think in time your desires change when you look at the Mirror of Erised. I wonder what Snape will see (as Hogwarts professor) at the mirror after Lily died? Would it still be her?

Yeah it changes depending on what you desire at the time you looked in the Mirror of Erised. I think for Snape it didn't change even when he became a Hogwarts professor. Seeing Harry reminded him of Lily too.
