I enjoyed all the creatures in part 1 but part 2, there weren't a lot plus there were given minimal screentime. Only the Niffler and the Bowtruckle got ample screentime in part 2.

True. Part 2 primarily focused on Theseus, Leta & Dumbledore/Grindelwald. The creatures were there but wasn't really involved so much unlike in part 1.
