I do think it's cool that all of the older/elder figures had such a big role and their own little society, since I feel like it's really easy to just sort of write them as just the old man characters. It's a very cool way to give them something special.

Older characters very often aren't given much to work with or storylines in their own right. You're right about that

Iroh was different

Also it's weird we're talking about this because I just rewatched City of Walls and Secrets and I kind of loved him making a better tea recipe. It was nice to see him and Zuko getting jobs and moving on (though it didn't last too long).
