I can relate to that, I'm always changing my arts, trying to get them a bit better every time.
You should post your gifs on Tumblr They look really nice!
And just like Millie Mae said, practice makes perfect (or as close to it, since most artists are very critics about their own work )

^ yeah, that's true! It's both a good and bad thing, because we force ourselves to be better, but at the same time we tend to be too harsh

I find I delete things I've made without saving or finishing sometimes just because I think it's horrible!

^ oh really?? I hardly never delete things.. I tend to not post them anywhere when I think they're bad, but keep them storage somewhere for no reason
