She hasn’t had a substantial break from acting since they started filming in 2004. Like she said on the podcast, it is a grind. I’m sure it has worn on her. Maybe after Greys is over and she’s been offscreen for a while she’ll feel differently, especially if someone she loves (like Denzel) gives her a cool opportunity.
