I think he found out about werewolves and hunters after he got information about the Kanima from the tablet. Otherwise why didn't he ask Scott and co for the beastiary earlier? Is that how you spell it?

After. I don't think Jackson killed anyone before bonding with Matt? Matt thinks/takes a picture of his victim then Jackson leaps into action.

I have to rewatch that episode because I kept getting ads interrupting the episode itself Maybe you're right

Seasonal just means we're human during the other seasons. It doesn't mean we don't exist outside of winter
