Yes her death would absolutely matter. You don't kill one part of your show's biggest ship or arguably one of your most popular characters and it not have an effect on your viewership. Also her death woudl destroy Oliver and that's not the direction they are taking his story. He needs her alive.

Joss Whedon's decision to kill off Tara Maclay didn't destroy the viewership of Buffy the Vampire Slayer despite the incredible popularity of the Willow/Tara relationship, and killing off Felicity wouldn't destroy the viewership of Arrow despite the incredible popularity of Olicity.
