And this is a show about fairytales, inspiring itself from the Disney movies mostly, so I think it's normal in such a world to have an instant connection, I actually like it and felt it with Ariel/Eric

If Eric/Ariel was her doing then wouldn't she be upset about Regina ruining it?

Two guesses (I am making this up as I go along):

Maybe Eric and Ariel's separation is part of the plan--or something she either foresaw as possible or realized she could make work for her once it had happened. Going through trials before they can be together will yield long term dividends. It will make their bond stronger in the end.

It may also create a situation where both their peoples will have more respect for a member of the other species. because of what each has to do for the other.
