I love how they basically wrote Matt's real-life injury into the show and even better - showed Joey obsessed with jam.

Then he's later telling Rachel a story about how his mom used to come home with a large jar of jam for him and Rachel says "you're so pretty"

Yeah, there was a huge story line devoted to Rachel telling Chandler and Joey her fears about not having the motivation to go and get another job.

It's really sweet of him. Plus, it adds depth to a character that many people thought of as the dense womanizer. It proved that Joey DID pay attention to his friends' problems

He definitely did, but that was clear from the beginning if you were paying attention

He also was the only one to talk to Rachel in 2x01

I'm adamant that his chat with Rachel in 2x01 encouraged her to keep faith in pursuing Ross

When Joey tells her how long and how much Ross has liked her, it changes everything.

It does, but most importantly, it made her feel better in that moment. Something that no one else bothered to do

It's also ironic, because Joey ended up feeling that way about Rachel himself

I loved that quiet moment between the two of them. He was literally the only person who took her aside privately to offer words of encouragement whereas Chandler felt burdened by the whole thing
