I can see Hyde saying something sarcastic but true about Jackie, but still saying it in a nice way if that makes sense.

It does make sense. Like his veiled way of saying he's happy with Jackie by saying he's been unhappy since the day they met. That's one of my favorite J/H moments. Hyde likes to disguise and deflect his true feelings, and by then Jackie totally gets that and is in on it (and plays along).

That is one of my favorite moments. Jackie understood him, and that's what was important.

Plus, they look so happy together.

Their friends would've been confused, though, had their mental faculties not been altered by the circle. They probably didn't even notice what Jackie and Hyde said or the subtext under it.

True. At least Kitty wasn't. I wish we'd gotten an episode where she said she knew Hyde and Jackie were inevitable -- or that she had a hunch they'd find their way to each other eventually. And a different episode where she tells Hyde that Jackie's less mean and bossy ever since dating him, which -- for Kitty -- means she must really be happy.
