Kitty would've wanted Eric to help her with baby duties (and doodies *ahem*), and he would have done everything he could to get out of it. Red would've made sure Eric learned how to diaper a baby. Eric, of course, would challenge Red to prove he still remembered how. Red would have some trouble there, and Kitty would give everyone living in the house an hour-long less on baby-care.

I think Eric might become less mature in response. (At least at first.)

The two episodes where Eric has to babysit a baby (for any period of time), he's not the most paternal. Other episodes with kids (who are younger than him), he's either not engaged or manipulates the kid for his own dirty work. I don't think he's a kid-person, honestly, which means him becoming a teacher makes even less sense.

Even his uncomfortable, even disgusted, reaction to Brooke's pregnant belly being in his proximity adds to the above.

If it's his own sibling, he'd either learn to like kids, or he'd finally understand why his sister seemed to hate him for most of his life (so far).
