I always assumed they just moved into Katy's apartment for the time being.

I thought the same thing. It made sense that Shawn moved into Katy's apartment. Shawn was one person compared to Katy and Maya, so he had less stuff than they did. Katy's apartment must have been bigger than Shawn's place, since she needed room for two people compared to one person. Plus it seemed like Shawn hadn't really put down roots, unlike Katy and Maya who had pretty deep roots. With all of that said, it was probably easier and made the most sense that Shawn was the one who did the moving.

I wish the show had gone on a few more seasons so we could have seen them as a family.

Oh, yes. I think they definitely had lots of plans for their future. I really wanted to see them being a family, so we could have seen/heard about some of those plans.

I'm the same, I can't imagine them not wanting more kids. I guess the only thing that would make them wait would be finances, but it seemed like Shawn was doing ok

I can't imagine it either. Kids would have been bonded them more as a family, so I'm sure they would have been all for them.

Yes, it did seem that way. I think Shawn and Katy would have wanted to be financially stable before they added another member to the family.
