As much as I would have liked to seen it, I think they left it like this to give Rory the last laugh in the situation.
And in this way, it was a nice opportunity for fanfic writers to fill that hole. I've read some great potential follow ups from that last scene

I've always liked the follow up where they kept pulling pranks on each other.. I think that was in Puppet Master.
I also like the follow up that makes the family interested in having the two of them date each other/marry each other.

I think it was meant that he didn't see her..

The nose thing was really cute.

It was great that Richard helped her with the prank. I wonder what she said to him why she did that.
