I had read similar statements/thoughts in different fanfiction pieces, but I wasn't sure if they were reliable sources. If nothing else, I know that authors write fanfic to correct mistakes made by the real writers, so I wasn't sure if this was how it really went down between Angel and Cordy or if it was the idealized version thought up to sooth and placate Buffy and Angel fans.

There are episodes here and there, with both A/C and Spuffy (mainly Spuffy, lol) that grate as a B/A fan (although Spuffy more offends me as a woman), but those things aren't that big a deal because it always comes back to Angel and Buffy. There are always those touch stone moments. Even in S7, Buffy talks about how she would have "given anything" to be with Angel and loved him "more than she will ever love anything in this life". A/C and Spuffy ultimately aren't that threatening as a BA fan because they just can't be to Angel and Buffy what they are to each other, and that's made clear. So I'm left comparing them on their own merits, and A/C>>>>>>Spuffy because at least it's not offensive on a general human level.
