Anywhoo, based on the Twilight books, the colour of their eyes changes depending on how much and what type of blood they have consumed. So maybe the same can be said for the eye colour changes in Underworld. Like when they need to feed their eyes are darker, when they have had their fill, their eyes are bright blue.
