~Because they both kept their dark secrets... and forgave each other for it.
~Because he went after a powerful sadistic maniac for her, with a baseball bat. On fire.
~Because Spike & Dru made him see what he wanted... and he saw her.
~Because she wasn't expecting to fall in love with him.
~Because she doesn't want to take it back.
~Because he cherishes her rose quartz gemstone.
~Because he knows Jenny could never be that mean.

Giles: Well, it's been nice talking to you.
Jenny: We were fighting?
Giles: Must do it again sometime.

Jenny: You really are an old-fashioned boy, aren't you?
Giles: Well, I don't hover a corkscrew from my ears if that's what you mean.
Jenny: That's not where I dangle it. [She smirks as she walks away]
I Robot, You Jane

Synder: [about the students] Every time a pretty girl walks by, every boy turns into a jibbering fool.
[Jenny walks by, and Giles' attention immediately turns to her]
Giles: Ms. Calendar.
Jenny: Mr. Giles.
Giles: Well, uh-uh, hello.
Snyder: See the way these kids gaze at each other...
Jenny: It's good to see you.
Giles: Yes.
Snyder: You think they're thinking about learning?
Giles: Were you headed to the factory room?
Jenny: Sound like fun. [She and Giles walk off]
Snyder: I try and tell them about the important things in life; punctuality, discipline, responsibility... I might as well be talking to myself.
When She Was Bad

Giles: I don't understand why a nation that prides itself on it's virility as much as America feels the need to put on 40 pounds of protective gear just in order to play rugby.
Jenny: That's your strategy for a first date? Insult my country's national pastime?
Giles: ...Did you just say "date"?
Jenny: You noticed that, huh?
Some Assembly Required

Jenny: I practically had to fold back every single page, so then I just started to underline the passages I really wanted to discuss. But then I spilled coffee all over it, so I can't even read it anymore...
Giles: It's a first edition...
Jenny: I'm lying, Rupert. The book's just fine. I just love to see you squirm.

Jenny: This Saturday...
Giles: Are we going out?
Jenny: I'd rather stay in...

Giles: It's going to be okay.
Jenny: I believe you.

Jenny: I'm doing okay, stayed out of mortal danger for 3 whole weeks. I could get used to it. Still having trouble sleeping though...
Giles: Of course, you need time.
Jenny: Or possibly space. Rupert, I know you're concerned but having you constantly poking around, making little puppy-dog eyes at me, wondering if I'm okay... You make me feel bad that I don't feel better. I don't want that responsibility.
Giles: I'm sorry. I don't mean to make... dog... eyes at you. I'm just -
Jenny: Worried. I know.
Giles I'm sorry. I should leave.
Ted

Jenny: We need to get you to a hospital. [starts to lift him up]
Giles: [wincing in pain] Slowly, slowly.
Jenny: Sorry. [She cracks up laughing] Some night, huh? You really know how to win a girl back.
Ted

Buffy: [starts to walk into the library, sees something, then decides not to walk in] Okay, I give up. Do I have to sound an airhorn every time I walk into a room?
[cut to Jenny and Giles kissing]
Ted

Jenny: I was raised by the people Angel hurt the most. My duty to them was the first thing I was ever taught. I wasn't expecting for any of this to happen. I wasn't expecting to fall in love with you. [She realizes what she has just said] God... It's too late to take that back, isn't it?
Giles: Do you want to?
Passion

Jenny: I just wanna be right with you.

Buffy: [To Jenny] He misses you. He doesn't say anything, but I can see it... I don't want him to be lonely. I don't want anyone to.

Giles: In my years as watcher, I've buried... too many people. Jenny was the first I loved.

Totally agree, except that I preferred Xander/Cordy to him and Anya

Giles and Jenny were soul mates, in my opinion

I love that in the episode I Only Have Eyes For You Giles was DESPERATE for that voice to be Jenny's... Until he realizes that Willow is right, and Jenny "could never be that mean"
