Indeed, Gwen. I think the answer revolves around ratings. Creators do what they think they need to do in order to stay on the air. Or they simply get too lazy to come up with anything better.
I sometimes forget that the writers aren't as attached to these pairings as we are. It's why I don't let myself get too invested anymore.

I don't think it occurs to them at all to actually be consistent with writing. Season 3 contradicts Season 2, Season 5 contradicts Season 4, Season 8 contradicts Season 7... And so on
They always added new writers who didn't care to remain true to the relationships we all cared about.
I would actually say that Season 6 is very contradictory as well, because Kelly goes from swearing to "not give up on Brandon" in Season 5 finale, then is suddenly bringing Colin back to meet everyone as if they've been together for ages
