Yes, that's also true. The damn books are canon and they'll probably wanna keep the couples the way they are. However, I'd like to mention that the show is based on the Charlaine Harris novels, and she's the writer of the Southern Vampire Mysteries that True Blood was based on.
And Arinna can tell you that True Blood didn't exactly stick with the established couples either, so perhaps there's a chance, who knows? And you're right, if Creek is only a minor character in the books there's no reason to keep her around on the show.
