Part of me being ok with season 1 being a one off is because it was designed that way. There was never the pressure of having follow up story lines or seasons. That's part of having everything come to culmination at the end of the finale.

Exactly. For me all good stories don't necessarily need a follow-up but given all the overwhelming response to the show and how successful it has become, S2 was also inevitable.
