Eric's sweetness varies throughout the seasons, I think. Depends on the episode and the scenario. But in season 6, he was not written that well. His attitude toward and treatment of Donna is quite a shift from his season-5 self.
The show definitely loses its sparkle after season 5 (by the end of it, really).
Season 6 has some good episodes, as does season 7, but the characterization is so inconsistent.
