I have theories why it stopped. I know the show never wanted to go a romantic route between the characters but given how close they got especially in S5, something had to have happened that perhaps one of them had to back away because they ~understood there were boundaries with their positions. I think the writers probably realized how they were writing them too and didn't want to send out mixed signals or whatever because they had to be only a crime show.
