personally how i feel is that its never over. even if its the last page of book seven and they're not together, then that just means a PoU type story where they get together where they're older, which i can definitely see happening. hermione and harry have an amazing friendship, its what made me like them since the first book. they know each other so incredibly well, better than i think they even realize most of the time. its a lot of fun to watch it on screen by dan and emma cuz they portray both their characters so well. i know that even if in the books we don't get them together, oh well. we'll always still have their wonderful lines they say to each other in friendship and all that.
personally i've always seen them getting together in the books if at all right at the end or years later. their friendship is so strong in the books that i'm pretty sure they're afraid of what'll happen if they take that step so they don't even think about it.
