There are so many instances where we only got to see a glance or a look from Juliet, and we (and the other characters) knew exactly what she was saying. Or even in tiny little moments after Juliet has had a conversation on interaction with someone, and you see the look in her eyes after the other person turns away - there's always something else there that she's telling us that she doesn't want anyone to see.

You're right, one look is enough. And the difficult thing is never being over the top, especially with the most emotional expressions. Elizabeth always gets those perfectly.
Some nice "eyes moments" come from the scenes where Juliet had to wear the surgical mask - the eyes become the only focus of attention on the actor's face.
