I think he loved what they could be, and ultimately he loved what she made him feel - someone who wanted to do good, and actually be someone. I think, as he said, he saw her heart and that she wasn't some beauty queen. He saw who she really was, and he wanted to protect her and be a man for her. And this he loved.
