The 4 hour tours are given on Wednesdays at 10am. They give you a tour of the background stuff.. where they edit, the writers room.. a more thorough tour. They also serve you lunch. I'd definitely call in advance and ask about the tour.
You do get to visit sets.. except when they are filming then the set is closed off to public. You can't take pictures in the front lot where they have the sets and you can't take pictures of the sets. Gilmore Girls is pretty popular.. most likely they will take you to their sound stages. If you mention to the tour guide that you really want to see Gilmore Girls.. they will do their best to make sure you can see the most of their sets. If they aren't shooting in Stars Hollow.. and if it's not dressed up (a festival or wedding), they will let you walk around the square. If it's dressed up for some reason, they will just drive you through it. And I believe they won't let you take pictures of it if it's dressed up.
The tour guides don't know much spoilers..but if you keep your eye out, you may see things that can give stuff away about what is going to happen in an upcoming episode.
